Quinoa with Shiitakes and Snow Peas
Ingredients
  • 1 cup quinoa, rinsed

  • 2 cloves garlic, thinly sliced
  • 4 ounces shiitake mushrooms, stems discarded, caps thinly sliced (about 2 cups)
  • 4 ounces snow peas, thinly sliced on an angle
  • Kosher salt and freshly ground black pepper
  • 1 tablespoon low-sodium soy sauce
  • 1 scallion, white and green, sliced
