Pork Roast in Pressure Cooker

Ingredients
- 2.5 lb pork roast
- Bag of tricolored baby carrots
- 1 cup of celery
- 1 yellow onion
- 2 cups of cabbage
- 1½ cups chicken stock
- 3 tbsp Apple cider vinegar
- 2 bay leaves
- 2 tbsp chopped garlic
- Onion powder
- Garlic powder
- Italian seasoning
Steps
- Turn pressure cooker on sauté and heat olive oil in the pot.
- Sprinkle onion powder, garlic powder and Italian season on both side of roast.
- Sear roast on all sides.
- Add chicken broth, garlic and bay leaves to the pot.
- Cover roast with chopped onions, carrots, celery and cabbage.
- Drizzle vegetables with olive oil and apple cider vinegar.
- Sprinkle additional onion powder, garlic powder and Italian seasoning on top of vegetables and stir lightly.
- Set pressure cooker on roast for 60 minutes.
- Let pressure cooker naturally release pressure for 15 minutes minimum.
Notes
- Vegetables soft. Try 50 minutes cook time next time.
