Pork Roast in Pressure Cooker
Ingredients
  • 2.5 lb pork roast
  • Bag of tricolored baby carrots
  • 1 cup of celery
  • 1 yellow onion
  • 2 cups of cabbage
  • 1½ cups chicken stock
  • 3 tbsp Apple cider vinegar
  • 2 bay leaves
  • 2 tbsp chopped garlic
  • Onion powder
  • Garlic powder
  • Italian seasoning
Steps
  1. Turn pressure cooker on sauté and heat olive oil in the pot.
  2. Sprinkle onion powder, garlic powder and Italian season on both side of roast.
  3. Sear roast on all sides.
  4. Add chicken broth, garlic and bay leaves to the pot.
  5. Cover roast with chopped onions, carrots, celery and cabbage.
  6. Drizzle vegetables with olive oil and apple cider vinegar.
  7. Sprinkle additional onion powder, garlic powder and Italian seasoning on top of vegetables and stir lightly.
  8. Set pressure cooker on roast for 60 minutes.
  9. Let pressure cooker naturally release pressure for 15 minutes minimum.
Notes
  • Vegetables soft. Try 50 minutes cook time next time.
