Chocolate Mint Pudding
Ingredients
  • 2 cups white beans (cooked)
  • ⅔ cup apple butter*
  • 3 Tbsp cocoa powder (low fat and unsweetened, such as Wonderslim)
  • ¼ cup non-dairy milk (such as cashew or rice milk)
  • ½ tsp peppermint extract
  • Sweetener of choice, to taste (I used 3 Tbsp of Swerve, an erythritol-based icing sugar)
