½ lb. Italian sausage

4 oz pancetta diced

1 medium yellow onion minced

1 to 2 medium carrots peeled and minced

1 stalk celery minced

7 cloves garlic minced

½ cup dry red wine

28 oz crushed tomatoes

¼ cup tomato paste

⅔ cup beef broth - reduced sodium preferred (or water)

1 Tbsp balsamic vinegar

1 ½ Tbsp dried parsley

1 tsp kosher salt

1 tsp granulated sugar

1 tsp dried oregano

½ tsp dried thyme

¼ tsp crushed red pepper flakes

¼ tsp black pepper

subheading: ADD AFTER PRESSURE COOKING:

¼ cup heavy cream

¼ cup chopped fresh basil
