  • 2 bulbsgarlic, cut in half horizontally
  • 4cloves
  • 1.6kgwhole chicken
  • 1 tbspChinese cooking wine
  • 1 tbspsesame oil
  • 4 tbsplight soy sauce
  • 2 tbspwhite soy sauce
  • 1 tbspfish sauce
  • 1 tspmirin
  • 75gginger, peeled and chopped
  • 25ggalangal, peeled and chopped
  • 2Lwater or chicken stock
  • salt, palm sugar, lime juice and fish sauce, to taste
  • Peanut Lime Sambal
  • 200graw unsalted peanuts
  • 3shallots, peeled and quartered
  • 5 freshlong red chillies, roughly chopped
  • 1 stalklemongrass, white part only, chopped
  • 2bird’s eye chilli
  • 5cloves garlic, peeled
  • 3dried chillies
  • 3limes, juiced and zested, or to taste
  • 3 tbspfish sauce
  • 30gpalm sugar, or to taste
  • 2 tbsptamarind paste

  • sesame seeds
  • spring onion
  • chilli
