mushroom, cauliflower and potato curry

Ingredients
  • 3 medium potatoes, diced
  • 2 onions, one sliced thinly and one chopped roughly
  • 8 cloves garlic, sliced
  • 3 chillies, minced
  • Small knob ginger, minced
  • 1 green bell pepper, sliced
  • Roughly 250g mushrooms, sliced
  • Half a medium cauliflower, chopped into small florets
  • 1 400g tin chopped tomatoes
  • Veggie stock
  • Turmeric
  • Ground ginger
  • Black pepper
  • Coriander
  • Cumin
  • Curry powder
Steps
  1. 1) sauté onions and dried spices (to taste) in splash of veggie stock until browned
  2. 2) add chillies, garlic and ginger, and sauté until soft
  3. 3) add mushrooms and green bell pepper and sauté until soft
  4. 4) add potatoes, cauliflower and chopped tomatoes, cover with stock and bring to a boil
  5. 5) reduce heat and leave to simmer until reached desired consistency
