15-Minute Chicken Cacciatore
Ingredients
  • 4 chicken thighs (or 2 chicken breasts), cut into small chunks
  • 1 clove garlic, finely chopped
  • 1 medium onion, finely chopped
  • 2 tablespoons olive oil
  • 1 cup / 3.8 oz / 108 gr white button mushrooms, sliced
  • 1 tablespoon chopped rosemary
  • ½ cup pitted olives (either black or green)
  • 1 glass of red wine
  • 2 anchovy fillets (optional)
  • 2 roasted red peppers (optional)
  • 1 teaspoon fine grain sea salt
  • ground black pepper to taste
  • 1 chili pepper, finely chopped (or 1 tablespoon red pepper flakes)
  • 1 28 oz / 800 gr can diced tomatoes
  • handful fresh basil, chopped
