Spicy Potato Breakfast Pancakes

Ingredients
  • subheading: Spicy Pancake:
  • 1 to 2 teaspoons cumin seeds
  • Olive oil, for frying
  • ½ to 1 green jalapeño, deseeded and finely chopped
  • 2 garlic cloves, peeled and finely sliced
  • One piece of fresh ginger root, about 1 inch (3 centimeters) in size, peeled and finely chopped or grated
  • 1 cup + 1 tablespoon (125 grams) all-purpose flour
  • 1 large egg
  • 1 ⅛ cup + 1 teaspoon (275 milliliters) whole milk, plus 1 to 2 tablespoons reserved
  • Sea salt
  • Freshly-ground pepper
  • subheading: Potato Filling:
  • Olive oil, for frying
  • 1 teaspoon mustard seeds
  • ½ onion, peeled and thinly sliced
  • 1 teaspoon ground turmeric
  • 4 to 6 cold, peeled boiled potatoes, roughly chopped
  • subheading: Dipping Sauce:
  • 6 tablespoons natural yogurt
  • 2 tablespoons chopped coriander leavs
