  • 3 to 4 lb. boneless chuck roast trimmed (I used a four-pound roast)
  • ¼ tsp. ground black pepper
  • 2 tbsp. avocado oil or olive oil
  • 8 oz. can tomato sauce
  • 1 cup water
  • 3 medium onions sliced and separated into rings
  • 2 cloves garlic finely minced
  • ¼ cup lemon juice
  • ¼ cup ketchup
  • 2 tbsp. light brown sugar packed
  • 1 tbsp. Worcestershire sauce
  • ½ tsp. ground mustard
