Crock Pot Balsamic Chicken
Servings: 6
  • 4-6 boneless, skinless, chicken breasts
  • 2 14.5 oz can diced tomatoes
  • 1 onion thinly sliced (Not chopped)
  • 4 garlic cloves
  • 1/2 cup balsamic vinegar
  • 2 tblsp olive oil
  • 1 tsp each: dried oregano,basil, and rosemary
  • 1/2 tsp thyme
  • ground black pepper and salt to taste
  1. Pour the olive oil on bottom of crock pot
  2. place in chicken breasts, salt and pepper each breast
  3. put sliced onion on top of chicken
  4. sprinkle the herbs and garlic cloves on top
  5. pour in vinegar and top with tomatoes
  6. Cook on high 4 hours, 6 hours on low; shred chicken and combine with tomato and onion mixture; serve over angel hair pasta or whatever your family's favorite is.  Top with Parmesan cheese.
  • Chicken thighs work as well and have a bit more flavor. I use a mandolin to slice the onion super thin.   I subsititute an Italian herb mix for all the spices and then eyeball a handful to keep it simple.  Leftovers are excellent and freeze well.
