Smothered Turkey with Gravy & Biscuits Recipe by Carla Hall
Ingredients

  • 2 turkey thighs (bone in, skin on)
  • 1 onion (roughly chopped)
  • 1 carrot (peeled and roughly chopped)
  • 2 ribs celery (sliced ¼-inch)
  • 3 sprigs thyme
  • 1 porter (12 ounces, or other dark beer)
  • 2 cups chicken stock
  • 3 tablespoons flour
  • 3 tablespoons butter
  • Kosher salt and freshly ground black pepper (to taste)
  • subheading: BUTTERMILK BISCUITS:
  • 2 ½ cups all-purpose flour (plus additional for dusting)
  • 1 tablespoon baking powder
  • 1 teaspoon sugar
  • 1 teaspoon table salt
  • ½ teaspoon baking soda
  • 2 tablespoons vegetable shortening
  • 1 stick unsalted butter (chilled and cut ½-inch dice) + 2 tablespoons (melted)
  • 1 ½ cups low-fat buttermilk (chilled)
