Raymond’s Balsamic Chickpea Salad
This is a family gathering favorite and is usually missed if someone doesn’t bring it.

Ingredients
  • 1 cup chopped green scallions
  • 1 lb grape tomatoes cut in ½ length wise (*not cherry*)
  • ¼ cup chopped cilantro
  • ¼ cup chopped Italian parsley
  • ½ cup extra virgin olive oil
  • 2 tablespoons minced garic
  • ¾ cup balsamic vinager
  • 1 teaspoon sugar
  • ½ teaspoon sea salt
  • 1 pinch ground white pepper
  • 2 cans of chickpeas (15.5 oz) (Drained)
Steps
  1. Place all ingredients in a bowl and stir together. Taste test and adjust as needed.
  2. Refrigerate at least 2 hours - 4 hours.
  3. Serve chilled.
