Pasta with Quick Sausage Ragu and Broccoli Rabe
Ingredients
  • 2tablespoons extra-virgin olive oil, plus more for serving
  • 1teaspoon kosher salt, divided, plus more
  • 1medium onion, finely chopped (about 1 cup)
  • 1medium carrot, finely chopped (about ½ cup)
  • 1medium celery stalk, finely chopped (about ½ cup)
  • 1pound fresh sweet or hot Italian sausage (or plant-based chorizo), either bulk or removed from casings
  • 2tablespoons tomato paste
  • ½cup dry white wine
  • 128-ounce can whole peeled tomatoes, crushed by hand in a bowl
  • 1small parmesan rind, optional
  • 1pound short pasta such as orecchiette, penne, or rigatoni
  • 1bunch broccoli rabe (about 12 ounces), cut into 2”-long segments (or substitute 12 ounces broccolini or broccoli florets)
  • ¼cup roughly chopped basil, for serving
  • Parmesan, finely grated, for serving, optional
