Ingredients
  • 1 teaspoon olive oil
  • 1 cup diced onions
  • 3 garlic cloves, minced
  • 4 cups fat free reduced sodium chicken broth
  • ½ cup water
  • 1 lb boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ⅛ teaspoon nutmeg
  • 6 tablespoons flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 5 tablespoons light butter (I use Land O’Lakes)
  • 2 cups fat free half-and-half
  • 16 oz package of gnocchi (I used Wegmans mini gnocchi, but regular-sized gnocchi are just fine!)
  • 2 cups torn fresh spinach leaves
