Chicken Zucchini Stir Fry
Ingredients
  • 2 tbsp avocado oil - or neutral cooking oil
  • 1 pound boneless skinless chicken thighs - cut into ½" cubes
  • 2 cloves garlic - minced
  • 1 tbsp ginger - minced
  • 1 red onion - diced into ¼″ dice, 3 cups
  • 4 zucchini - 1 ½ pounds, cut into half moon slices, 6 cups
  • subheading: Sauce:
  • ¼ cup coconut aminos
  • 1 tsp toasted sesame oil
  • ½ tsp red pepper flakes
  • Sea salt and freshly ground black pepper to taste
  • Rice vinegar to taste
  • Sesame seeds for garnish if desired
