Almond Rosemary Lemon Crusted Tofu

  • 1 350g block extra-firm or firm tofu drained, pressed*, and cut into 8 slices
  • ½ cup raw almonds
  • 2 tablespoons fresh rosemary (about 2 sprigs with stems removed)
  • ½ cup bread crumbs (gluten-free if preferred)
  • 1 teaspoon lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ½ cup all-purpose flour (gluten-free if preferred)
  • 1 cup full-fat coconut milk (or other non-dairy milk if preferred)
  • lemon wedges for serving
