  • 1 cup corn, fresh or frozen
  • 1 cup sliced celery
  • ½ cup chopped onion
  • 3 tablespoons chopped fresh parsley, plus more for garnish
  • 2 teaspoons chopped fresh thyme or ¾ tsp. dried
  • 1 teaspoon lemon zest
  • ¼ teaspoon ground pepper
  • subheading: Topping:
  • 1 (10 ounce) package frozen riced cauliflower, such as Birds Eye
  • ⅓ cup grated Parmesan cheese
  • ¼ cup all-purpose flour or panko breadcrumbs
  • 2 tablespoons unsalted butter, melted
