White chicken chili - GF
Ingredients
  • 1 Tbsp extra virgin olive oil
  • 2 boneless, skinless chicken breasts, cut into ½-inch pieces
  • 2 tsp ground cumin
  • ½ tsp sea salt
  • ¼ tsp fresh ground pepper
  • 1 small onion, chopped
  • 1 can rotel tomatoes
  • 2 tsp fresh garlic, minced
  • 4 cups gluten free chicken broth
  • 2 cans (15 oz) Great Northern Beans, drained (or 3 cups)
  • 1 cup frozen corn (we use organic)
  • 8 oz cream cheese (we used Vegan to make it Dairy Free)
  • Cilantro & Lime for garnish
