Ingredients
  • 2 c. water
  • 1 c. chopped, raw peanuts
  • 1 onion (sliced)
  • 2 medium tomatoes (sliced)
  • 2 bunches spinach OR collard greens (chopped)
  • salt
  • cooked polenta OR rice
Steps
  1. Bring water to boil in medium-sized pot.
  2. Stir in peanuts, tomatoes, & onion; continue cooking.
  3. After a few minutes, stir in the greens.
  4. Continue cooking, stirring occasionally, until peanuts are soft & the mixture has become a thick, buttery sauce.
  5. Serve hot over polenta or rice.
