Ingredients
- 2 c. water
- 1 c. chopped, raw peanuts
- 1 onion (sliced)
- 2 medium tomatoes (sliced)
- 2 bunches spinach OR collard greens (chopped)
- salt
- cooked polenta OR rice
Steps
- Bring water to boil in medium-sized pot.
- Stir in peanuts, tomatoes, & onion; continue cooking.
- After a few minutes, stir in the greens.
- Continue cooking, stirring occasionally, until peanuts are soft & the mixture has become a thick, buttery sauce.
- Serve hot over polenta or rice.
