  1. 1. Carefully score skin only in cris-cross pattern.
  2. 2. Place breast skin side down in cold fry pan gradually turning up the heat to med/high
  3. 3. After 10 minutes, skin should be crisp, golden brown
  4. 4. Remove most rendered fat then flip breast over and sear for 2 minutes.
  5. 5. Place breast in Preheated oven 325°F for 7 to 10 minutes (internal temp of 130 to 135°F
  6. 6. Remove from oven and allow to rest 3 to 5 minutes
