  • 2 pound center cut beef tenderloin

  • 1 shallot
  • 4 cloves of garlic
  • ½ cup of madeira wine
  • 1 puff pastry sheet flour for dusting
  • 6 slices of prosciutto ham
  • 1 tablespoon of Dijon mustard
  • 1 whisked egg
  • Kosher salt and fresh cracked pepper to taste
  • Chopped chives and thyme for garnish
