Sweet Potato Broccoli Chickpea Bowls
Ingredients

  • 2 cups broccoli florets
  • 1 tsp olive oil, divided
  • 1 cup cooked brown rice
  • 1 ½ cups cooked chickpeas
  • 2 tbsp diced red onions
  • 1 avocado, sliced or diced
  • lemon wedges (optional)
  • subheading: Garlic Tahini Sauce:
  • ⅓ cup tahini
  • 2 garlic cloves, pressed or finely chopped
  • 1 tbsp pure maple syrup
  • 1 tbsp lemon juice (or more to taste)
  • 2 to 3 tbsp hot water (or more to make thinner, see note below)
  • salt and pepper to taste
