Quick & Easy Madras Lentils (Gf, Df, V)
Ingredients
  • 2 tablespoons unsalted butter or olive oil
  • 1 yellow onion, chopped (about 1 ½ cups)
  • 1 red bell pepper, chopped (optional)
  • 2 tablespoons grated fresh ginger
  • 1 tablespoon minced fresh garlic
  • 3 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon garam masala optional
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes
  • 4 cups low-sodium vegetable broth
  • 1 cup dry black beluga lentils
  • 1 (14-ounce) can red kidney beans, drained and rinsed
  • 1 tablespoon white wine vinegar
  • 2 teaspoons honey
  • Cilantro, canned coconut milk, naan bread and/or rice for serving
