Prosciutto Caprese Puff Pastries with Peppery Thyme Honey

  • 1 cup oil packed sun-dried tomatoes, oil drained
  • 8 ounces mozzarella or burrata cheese
  • 1 egg beaten
  • ½ to 1 teaspoon black pepper, plus more for serving
  • flaky sea salt
  • ¼ cup honey
  • 1 tablespoon fresh thyme leaves (or 2 teaspoons dried thyme)
  • fresh basil, for serving (optional)
