Steve's go-to holiday gift for co-workers. One Christmas he made several batches, a step up from his normal store bought lollipop gifts.
Ingredients
  • 1 C. raw peanuts, skinned
  • ½ C. white corn syrup
  • 1 C. sugar
  • ⅛ t. salt
  • 1 t. butter
  • 1 t. vanilla etract
  • 1 t. baking soda
Steps
  1. Generously butter a baking sheet.
  2. Combine nuts, corn syrup, sugar and salt in a 2 quart microwave safe dish. Microwave on high power for 8 minutes, stirring every 2 minutes. (Use this timing sequence: 2:40, 2, 2:30, 2). This is using a 700 W oven.
  3. Add butter and vanilla, do not stir. Microwave additional 2 minutes on High. Stir in baking soda vigorously and turn out onto prepared baking sheet, spreading to desired thinness.
  4. Allow to cool then break into pieces. Store in airtight container.
