Easy Slow-Cooked Beef Roast

  • 2 tbsp vegetable oil
  • 1 (5 to 6 lb) brisket or any beef roast
  • 2 large onions (peeled and cut into ¼ in slices)
  • 6 garlic cloves (peeled and minced)
  • 1 (12 oz) can of beer
  • ½ cup low-sodium beef broth
  • 4 celery stalks (cut into ½ in slices)
  • ½ cup tomato paste
  • 1 (14 ½ oz) can of stewed tomatoes
  • 2 bay leaves
  • ½ cup packed dark brown sugar
  • ⅓ cup dijon mustard
  • ½ cup red wine vinegar
  • ¼ cup regular molasses
  • ⅓ cup soy sauce
  • 1 tsp paprika
  • salt and ground black pepper (to taste)
