Simmered butter beans with bacon and shrimp
Ingredients
  • 1 can Goya butter beans drained
  • Drizzle of olive oil or coco oil
  • 2 slices raw bacon, chopped
  • 2 cloves minced garlic
  • Sprinkle of smoked paprika (optional, but it brings out the bacon flavor)
  • 2  cup chicken broth or bullion, halved (you might not need both cups)
  • 1 t chopped fresh rosemary
  • 1 t tomato paste (optional, adds a bit of sweetness)
  • 1 t lemon or hot sauce, or both (optional, for adding at end)
  • 1 cup cleaned raw shrimp, chopped in half, tossed in chopped parsley, salt, rosemary
Steps
  1. Fry bacon. If it seems too greasy drain some fat.
  2. Add paste and garlic, cook 1 to 2 minutes, stirring.
  3. Add everything else but hot sauce, bring to a simmer and cook on med-low until thickened and broth is reduced by half, gently stirring occasionally, about 20 to 30 min. It should not be too soupy, the beans keep absorbing liquid. Add extra broth if too dry.
  4. Add hot sauce and shrimp, stir, and cook 8 to 10 minutes, until just firm.
  5. Stir all gently with rubber spatula so the beans don't split.
  6. Let sit, covered, for a few minutes.
  7. subheading: Top with your choice of :
  8. scallions, chives, or parsley, lemon, and a pat of butter when serving.
