Oil-Free Vegan Tamales (Easy + Gluten-Free)

  • ~¼ to ½ cup low-sodium vegetable broth or water
  • ½ large red onion, finely diced
  • 2 cloves garlic, minced
  • ½ Anaheim pepper, finely diced*
  • 1 Roma tomato, diced
  • ½ medium russet potato, diced small
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 (15.5 oz) can pinto beans, drained and rinsed
  • ½ cup cilantro, minced
  • Salt & pepper, to taste
