CLAFOUTI
Ingredients
  • 1 pound strawberries
  • 1 pound ripe bananas (approximately 3)
  • 10 ounces of fruit only sweetened jam (see chia jam recipe above)
  • 2 cups gluten-free oats
  • 1 teaspoon sodium-free baking powder
  • ½ cup unsweetened applesauce
  • 1 cup unsweetened non-dairy milk
Steps
  1. Preheat oven to 350 degrees F. Slice fruit and mix well with jam. Place in an 8" x 8" silicone pan. Mix remaining ingredients in a bowl and place evenly over fruit. Bake for 45 to 50 minutes until golden brown.
Notes
  • If this is not sweet enough for family members who are not following the UWL Program, substitute unsweetened apple juice for the non-dairy milk.
