Caribbean Black Bean Soup with Mango Relish
Ingredients
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 3 cloves garlic, minced
  • 3 cups low-sodium vegetable broth
  • 2 15-oz. cans no-salt-added black beans, rinsed and drained
  • 1 medium sweet potato, cut into ½-inch pieces (1½ cups)
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon dried thyme, crushed
  • ¼ teaspoon cayenne pepper
  • ½ cup chopped fresh or thawed frozen mango
  • 2 tablespoons sliced scallion
  • 2 tablespoons chopped fresh cilantro
  • 1 finely chopped fresh habanero chile (see tip in recipe intro)
  • Sea salt and freshly ground black pepper, to taste
  • 2 cups hot cooked brown rice
