Roasted Butternut Squash, Chorizo and Feta Salad
  • Ingredients (UK/Australia? Click below for grams/ml)
  • For the salad:
  • 500 grams butternut squash deseeded, peeled and chopped into chunks (about half a large butternut squash, or most of a smaller one - amount doesn't have to be exact)
  • 2 tablespoons olive oil
  • 100 g chorizo thinly sliced
  • 50 g feta cheese crumbled
  • 1/4 cup pine nuts
  • 3.5 ounces salad leaves of your choice
  • 1 teaspoon dried Thyme or other dried herbs e.g. basil, oregano, mixed Italian herbs, or 2 sprigs fresh thyme
  • salt and black pepper
  • For the dressing:
  • 3 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • To serve (optional):
  • toasted fresh bread drizzled with olive oil and sprinkled with salt
