These are better than any Home Fries I've had at a restaurant!

Ingredients
- 2 medium-sized Yukon Gold Potatoes (approx. 11 oz.)
- 1 Tbsp. Olive Oil
- 1 tsp. fresh Thyme, minced
- 1 tsp. Garlic Powder
- S&P to taste
- just a small sprinkle of Smoked Paprika
- ¼ C. fresh Parsley, chopped, or just a sprinkle of dried before hand
Steps
- Wash & scrub the Potatoes
- Dice the Potatoes into about ½ inch pieces
- Place the `Tater cubes in a bowl of cold water to about 30 minutes
- Drain & dry the Potato cubes well, oh and dry that bowl too
- Replace the Potatoes back into that now dry bowl
- Drizzle in the Olive Oil, followed by the rest of the ingredients, except the Parsley, and toss/stir everything together until the Potatoes are well coated
- Set your Air Fryer to 400° and 18 minutes
- Once preheated, pour those well seasoned `Taters into the basket of the Air Fryer and cook
- Shake/toss the Potatoes at the half way point
- Once done, plate and garnish the Potatoes with the Parsley
Notes
- *IF there's any leftovers, allow to cool and refrigerate for up to 4 days. To re-heat, pop them back into the AF for 5 minutes at 400°
