These are better than any Home Fries I've had at a restaurant!
These are good for any meal.

Ingredients
  • 2 medium-sized Yukon Gold Potatoes (approx. 11 oz.)
  •  
  • 1 Tbsp. Olive Oil
  •  
  • 1 tsp. fresh Thyme, minced
  •  
  • 1 tsp. Garlic Powder
  •  
  • S&P to taste
  •  
  • just a small sprinkle of Smoked Paprika
  •  
  • ¼ C. fresh Parsley, chopped, or just a sprinkle of dried before hand
Steps
  1. Wash & scrub the Potatoes
  2. Dice the Potatoes into about ½ inch pieces
  3. Place the `Tater cubes in a bowl of cold water to about 30 minutes
  4. Drain & dry the Potato cubes well, oh and dry that bowl too
  5. Replace the Potatoes back into that now dry bowl
  6. Drizzle in the Olive Oil, followed by the rest of the ingredients, except the Parsley, and toss/stir everything together until the Potatoes are well coated
  7. Set your Air Fryer to 400° and 18 minutes
  8. Once preheated, pour those well seasoned `Taters into the basket of the Air Fryer and cook
  9. Shake/toss the Potatoes at the half way point
  10. Once done, plate and garnish the Potatoes with the Parsley
Notes
  • *IF there's any leftovers, allow to cool and refrigerate for up to 4 days. To re-heat, pop them back into the AF for 5 minutes at 400°
