Ingredients
- 1 tablespoon coconut oil
- 4 eggs
- Flat-leaf parsley
- Mint leaves
- 4 radishes, halved or quartered

- extra-virgin olive oil
- subheading: BABA GHANOUSH:
- 1 large eggplant (about 500g)
- 1 ½ tablespoons olive oil
- 50 g hulled tahini
- 2 garlic cloves
- 1 tablespoon lemon juice
- ½teaspoon ground cumin
- ⅛ teaspoon chilli powder
- Sea salt
- Freshly ground black pepper
- subheading: LEBANESE SPICED LAMB:
- 2 tablespoons coconut oil
- 1 onion, finely chopped
- 4 garlic cloves, finely chopped
- 800 g lamb mince
- 2teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons sweet paprika
- 2 teaspoons dried mint
- 1 ½ teaspoons ground allspice
- ¼ teaspoon ground cinnamon
- 2 bay leaves
- 250 ml (1 cup) chicken bone broth (recipe below)
- 1 long red chilli, deseeded and finely chopped, plus extra to serve
- 3 tablespoons pine nuts, toasted
- subheading: CHICKEN BONE BROTH (MAKES ABOUT 3.5 LITRES):
- 1 to 1.5 kg bony chicken parts (I like to use necks, backs, breastbones and wings)
- 2 to 4 chicken feet (optional)
- 2 tablespoons apple cider vinegar
- 1 large onion, roughly chopped
- 2 carrots, roughly chopped
- 3 celery stalks, roughly chopped
- 2 leeks, white part only, roughly chopped
- 1 garlic bulb, cut in half horizontally
- 1 tablespoon black peppercorns, lightly crushed
- 2 bay leaves
- 2 large handfuls of flat-leaf parsleystalks
