Quick & Simple Mushroom Ragu
Ingredients
  • 4 chopped tomatoes (large)
  • ½ carrot
  • ½ zucchini
  • 150g mushrooms
  • Half diced red or green capsicum
  • Handful chopped spinach, silverbeet or kale
  • 2 cloves garlic - crushed
  • ½ red/brown onion dices
  • 1.5 tbsp tomato paste
  • ½ cup water
  • Italian herbs, oregano, basil, thyme, rosemary - or just some fresh basil (chopped)
  • Salt and pepper to taste
