Buffalo Cheddar Macaroni & Cheese
Ingredients
  • 2 lbs macaroni
  • ¾ cup butter
  • ¾ cup flour
  • 6 cups milk
  • 8 cups extra sharp cheddar
  • 1 cup Yancey's Fancy Buffalo Wing Cheddar
  • 1 ¾ T salt
  • 1 T pepper
Steps
  1. 1. Cook macaroni
  2. 2. In a big stock pot, make a roux with the flour & butter.
  3. 3. Add milk, salt, and pepper.
  4. 4. Add cheese, stirring consistently until cheese is melted.
  5. 5. Add macaroni to cheese sauce in pot; mix together to coat macaroni.
  6. 6. Pour macaroni into greased baking pan and top with breadcrumbs. Bake in oven at 350 for 30 minutes-1 hour, depending on dish size.
