  • 2 pounds russet potatoes peeled
  • 1 large onion peeled and quartered
  • 2 large eggs
  • 1 ½ tbsp tapioca flour or arrowroot flour
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • ½ to ¾ cup avocado oil or light flavored olive oil, for frying
  • Scallions or chives thinly sliced, for garnish
  • Unsweetened applesauce for dipping
  • Whole30 ketchup (like Tessemae's) for dipping
  • Whole30 Ranch (like Tessemae's) for dipping
