Chile Relleno Casserole
- We’ve been vegan for a while... but finding vegan Keto challenging. This is my favorite thing so far - you guys, chili relleno bake and OMG we are in heaven. Just layer up whole green pepper, vegan cheese, beyond meat feisty crumbles, and some red enchilada sauce, bake at 350-375 for 30-40 and BAM. It’s spicy, warm comfort food - just adjust all the goodies to fit your macros. Happy New Year!
