Simple vegetable noodles
Ingredients
  • 3 portions noodles
  • 1 tbsp sesame oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 large red pepper, diced
  • 1 large carrot, peeled and chopped
  • 1 ½ cups shiitake mushrooms, chopped
  • 2 cups snow peas
  • 3 tbsp tamari
  • 2 tbsp rice vinegar
  • 1 tbsp tomato paste
  • 1 tbsp coconut sugar
  • 3 tbsp water
  • 1 tbsp cornstarch
  • Sesame seeds, to serve
Steps
  1. Cook the noodles according to instructions on packaging.
  2. Meanwhile, heat the sesame oil in a large wok/pan and add the onion, garlic, bell peppers and carrots, cooking for a few minutes to soften.
  3. Now add the shiitake mushrooms and snow peas, cooking for 5 minutes more.
  4. Make the sauce by stirring together the tamari, rice vinegar, tomato paste, coconut sugar, water and cornstarch.
  5. Add the sauce to the wok together with the cooked noodles.
  6. Stir for a few minutes to coat the noodles, then serve with sesame seeds.
