Yellow Split Pea Stew
Ingredients
  • Beef        shank         1½ lb
  • Onion                         2 + 1
  • S+P
  • Turmeric                    1 tsp
  • Cinnamon                  ½ tsp
  • Saffron
  • Yellow Split Peas      1 cup
  • Tomato Paste            2 to 4 Tbs
  • Lemon Juice
  • Limu                            4 to 5
  • Eggplant                     4 to 5 thin ones
Steps
  1. cut meat into small cubes + cook in pressure cooker with Onion + S/P + Turmeric          20 min
  2. yellow split peas    wash + soak     1 hour
  3. soak limu in hot water
  4. Eggplant     peel + cut in half lengthwise + add to boiling salt water + cook 5 min + remove/drain/papertowel dry + fry until golden + set aside
  5. dice onion + fry golden
  6. subheading: to the "pressure cooker cooked meat" add:
  7. drained yellow split peas
  8. fried onion
  9. tomato paste
  10. cinnamon
  11. S+P   as needed
  12. soaked limu
  13. Turmeric
  14. subheading: once fully cooked add:
  15. Saffron (dissolved in a little hot water)
  16. Lemon Juice    just a little
  17. place fried eggplant on top and serve
