Bowtie Pasta with Chicken and Spinach
my version of something like Chicken Florentine
Ingredients
  • 4 to 6 chicken thighs cut into bite-sized pieces
  • 1 lb Farfalle
  • 1 box chicken broth (4 cups)
  • 1 cup water
  • 1 10-12oz box frozen chopped spinach
  • Fresh baby spinach if you want more at the end
  • 2 Tbsp cream cheese or you can use parm, yogurt, as much as you want. This is very flexible. It is not like a pasta and cheese dish, but just something to make the broth more sauce like.
Steps
  1. You can saute chicken a minute while you gather the ingredients but not necessary.
  2. Layer bowties, then broth and water, then spinach frozen block on top
  3. HP 5 to 6 minutes. npr 4 to 5 minutes,
  4. Open and add fresh spinach if using and stir in cheese
