Peanut Butter Cookie Cobbler
Ingredients
  • subheading: Filling:
  • 6 oz blueberries
  • 6 oz strawberries
  • 2 tbsp water
  • ½ tbsp lemon juice
  • ¼ cup powdered sweetener
  • ½ to ¾ tsp xanthan gum
  •  
  • subheading: PB Cookie Topping:
  • 1 egg
  • 1 cup peanut butter
  • ¾ cup sweetener
Steps
  1. Add filling wet ingredients to a sauce pan, on med high heat. Stir often.
  2. Once boiling, reduce heat to simmer.
  3. Add dry ingredients. Let thicken and remove from heat.
  4. Let cool a bit.
  5. While berries are cooling, preheat oven to 350°.
  6. Pour berries into well greased 8x8 baking dish, spread evenly.
  7. Mix PB cookie ingredients into a dough.
  8. You can form cookies for the top of the cobbler or pinch off little chunks and cover cobbler that way
  9. Bake for 20 to 30 minutes. When done, allow to cool on the counter.
Notes
  • Any PB cookie recipe should work just fine.
  • Swapping blueberries with rhubarb would also be yummy. More sweetener might be needed.
