Ingredients
  • 2 ½ pounds Certified Angus Beef ® chuck roast, cut into 3” cubes
  • 6 dried guajillo peppers, stems and seeds removed
  • 2 cups low-sodium beef broth

  • 1 ½ teaspoons fresh cracked pepper
  • 2 teaspoons cumin, divided
  • 1 tablespoon canola oil
  • 1 medium white onion, diced (about two cups)
  • 4 cloves of garlic, minced
  • 1 tablespoon tomato paste
  • 2 teaspoons oregano
  • 1 cinnamon stick
  • 1 (10-ounce) can roasted tomatoes and green chilies (like Rotel® brand)
  • 2 chipotles in adobo (about 2 tablespoons)
  • 2 limes, one juiced one sliced
  • 14 ounces shredded Chihuahua cheese or Monterey jack
  • 16 (5-inch) corn tortillas
  • ½ cup chopped cilantro
