3 Bean Vegan Chili for Instant Pot, Stove, or Crockpot
Ingredients
  • 2 Tbsp Extra Virgin Olive Oil or any olive oil
  • 1 small Onion finely chopped
  • 2 large Carrots diced
  • 2 stalks Celery chopped
  • 3 cloves Garlic minced
  • 1 15 oz can Black Beans rinsed and drained
  • 1 15 oz can Cannellini Beans rinsed and drained
  • 1 15 oz can Red Kidney Beans rinsed and drained
  • 1 cup Corn frozen, canned, or fresh
  • 2 cups Vegetable Broth
  • 1 14.5 oz can Reduced-Sodium Diced Tomatoes keep juice
  • 3 oz No Salt Added Tomato Paste or 5 Tbsp
  • 3 Tbsp Chili Powder
  • ½ tsp Ground Cumin
  • ½ tsp Kosher Salt
  • ¼ tsp Black Pepper
