Beer-Braised Mussels and Belgian Fries with Sauce Gribiche

  • ⅓ cup prepared regular or lite mayonnaise
  • 1 hardboiled egg, chopped
  • 1 hardboiled egg yolk, chopped
  • 2 tablespoons cornichons, chopped
  • 2 teaspoons mustard
  • 2 teaspoons capers
  • 1 tablespoon parsley
  • 1 tablespoon tarragon
  • 1 tablespoon chives
  • Beer-Braised Mussels
  • 2 strips bacon, finely chopped
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • ½ cup beer (lager, blonde or wheat recommended)
  • ½ cup chicken broth or water
  • 2 pounds mussels, scrubbed and cleaned
  • 2 sprigs rosemary
  • 2 springs thyme
  • 2 tablespoons heavy cream
  • 2 tablespoons butter
