Cauliflower Grits with Blackened Shrimp
Ingredients
  • 1 medium-large head cauliflower, about 2 pounds, trimmed and cut into small florets
  • 1 cup milk, I used unsweetened almond milk
  • 2 Tablespoons butter, divided
  • ½ teaspoon sea salt more to taste
  • fresh ground black pepper, to taste
  • ⅓ cup grated Parmesan more for serving
  • 1 lb. peeled and deveined tail-on medium shrimp
  • 1 Tablespoon blackened seasoning, or cajun seasoning
  • 2 tablespoons chopped fresh parsley
