Gochujang Chicken Meal Prep
Ingredients
  • 2.5 cups short-grain white rice
  • 2.5 cups water
  • 2.2 lb (1kg) boneless skin-on chicken thighs (or boneless skinless chicken breasts)
  • 3 green onions, divided
  • 11 cloves garlic, divided
  • 8 oz (220g) shishito peppers (or asparagus, brussels sprouts, string beans, etc.)
  • 1 red chili (optional)
  • 2 tbsp neutral-tasting oil, divided
  • 1 tsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp toasted sesame oil
  • Generous pinch of toasted sesame seeds, to garnish
  • subheading: Marinade:
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • ΒΌ tsp white pepper (or black pepper)
  • 2 tbsp cornstarch
  • 1 tsp baking soda
  • 1 tbsp neutral oil (such as grape seed, canola, vegetable oil, etc.)
  • subheading: Stir Fry Sauce:
  • 3 tbsp Korean chili paste (gochujang)
  • 2 tbsp Korean chili pepper flakes (gochugaru)
  • 1.5 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp chicken bouillon powder
  • 1 tbsp sugar
  • 3 tbsp mirin
  • Black pepper, to taste
  • 5 tbsp water
  • 1.5 tbsp cornstarch
