Creamy Lemon Pasta
This lemon pasta is going to become a favorite! The taste is so light and fresh and the texture is smooth and creamy!

Ingredients
  • 1 lb linguini
  • 2 teaspoons grated lemon zest
  • ½ cup fresh lemon juice (about 3 lemons)
  • ½ cup heavy whipping cream
  • 8 oz skim ricotta cheese
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ⅓ cup grated Parmesan cheese
  • Parsley for garnish

  1. Instructions
  2. Prepare pasta according to package directions without adding any salt. Drain, reserving ½ cup of cooking liquid.
  3. Place reserved cooking liquid, lemon zest, lemon juice, cream and ricotta cheese in a blender. Process until smooth.
  4. Heat a deep skillet over medium heat.
  5. Add the sauce to the pan. Whisk in Parmesan cheese and stir. Continue to heat sauce for 1 to 2 minutes or until sauce begins to thicken. Add in pasta, tossing to coat.
