Paul Hollywood's Cumberland Rum Nicky
Ingredients

  • 250g medjool dates, pitted and coarsely chopped

  • 50ml dark rum
  • 50g dark brown soft sugar
  • 50g unsalted butter, cut into 1cm dice

  • 100g unsalted butter, chilled and cut into 1cm dice
  • 1 egg, lightly beaten
  • 1 tsp lemon juice
  • 2 tbsp very cold water
  • 1 egg, beaten, to glaze
  • subheading: For the rum butter:
  • 100g unsalted butter, softened
  • 225g light brown soft sugar
  • 75ml dark rum
