Ingredients
  • subheading: Vinegret, or Винегрет in Russian, is a salad that is eaten across Eastern Europe, Russia and Central Asia. I was actually introduced to this salad as a child by my mother and grandmother - in Lithuanian it's called 'vinegretas' or mišrainė. In any case, there are lots of different versions of this salad, but my basic one calls for the following:
  • 2 boiled beets
  • 2 boiled potatoes
  • 1 cup boiled carrots
  • 1 cup pickles
  • 1 cup beans (white beans or kidney beans are fine!)
  • Fresh dill - the more the better!
  • Olive oil, lemon juice and vinegar (or instead of vinegar, try using two teaspoons of juice from your pickle jar - it's my mom's secret method and I swear it makes the salad taste great!)
  • Salt and pepper to taste

  • Just cut all the vegetables and mix in a bowl with your fresh dill. Add seasoning and dressing to taste.

  • Now you can also add peas or sauerkraut to this salad. I've seen corn added too. There's no strict rules so feel free to substitute and improvise.
