Ingredients
  • 2 lbs beef chuck, cut into 1 inch pieces
  • salt and pepper
  • Avocado oil
  • 1 onion chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 tbsp minced garlic
  • 2 tbsp tomato paste
  • ½ cup red wine, I use a dry red wine
  • 1.5 quarts beef stock
  • 3 bay leaves
  • 3 sprigs of thyme
  • 1 lb carrots, cut into half inch rounts
  • 1 lb red potatoes, cut in half
